יונית אמיתי-כהן נולדה בארצות הברית ועלתה לישראל עם משפחתה בגיל 12. היא למדה בתיכון שליד האקדמיה למוסיקה על שם רובין בירושלים, ויותר מאוחר סיימה תואר ראשון בביצוע אצל הב' לודמילה פלדמן באקדמיה למוסיקה. היא המשיכה את לימודיה בגרמניה אצל פרופ' רולנד בלדיני בלייפציג. יונית הופיעה כסולנית עם תזמורות כגון התזמורת הסמפונית ירושלים, התזמורת הסמפונית ראשון לציון ותזמורת חיפה. כמו כן יונית מופיעה עם תזמורות ואנסמבלים רבים כגון התזמורת הפילהרמונית הישראלית, התזמורת הסמפונית של המבורג, תזמורת הדיוואן, התזמורת הסמפונית הישראלית, אנסמבל מיתר, אנסמבל המאה ה-21 והרכבים קאמריים שונים בארץ ובחו"ל. יונית גרה בתל אביב עם בעלה ושני ילדיהם הצעירים.
Yonit Amitai-Cohen was born in the United States and came to Israel at the age of 12. She studied at the High school of the Rubin Academy in Jerusalem, and later finished a B.Mus in performance with Ms. Ludmilla Feldman at the Jerusalem Music Academy. She continued her studies in Germany with Prof. Bernard Hartog in Berlin and Prof. Roland Baldini at the HMT Mendellsohn Bartholdy in Leipzig. Yonit has performed as a soloist with orchestras such as the Jerusalem Symphony Orchestra, The Israel Symphony Rishon LeTzion and the Haifa Symphony Orchestra, and enjoys performing with with various orchestras and ensembles such as the Israel Philharmonic, Hamburg Symphony Orchestra, West Eastern Divan, Mendelssohn Chamber Orchestra Leipzig, Israel Contemporary Players, Ensemble Meitar, and various chamber groups in Israel and abroad. Yonit is a member of faculty at the Israel Conservatory and lives in Tel Aviv with her husband and two young children.
